- 200 grams zucchini
- handful of rocket
- spoonful of extra virgin olive oil or sesame oil
- pine nuts
- juice of half a lemon
- half of a banana (if you are willing to experiment)
Thinly slice the zucchini, brush with oil and grill both sides on a grill-pan. Mix with washed rocket, lemon juice and oil, and sprinkle with toasted pine nuts. You can add banana slices to the mixture.
